Heart Warming Hot Chocolate

There’s something about when the bees come out buzzing for the first time all winter long that gets my heart all giddy. This gorgeous spring weather is teasing us here in the mountains of Western North Carolina. It is due to turn chilly again soon. (Insert sad face here) Sooo we’re not putting away our snowboards just yet. We are like dogs lying in the sun, soaking it all up as much as we can.

I already know once the cold snap returns, I’m going to have to consciously remind myself (and my children) to keep celebrating winter. There’s many ways to cherish this season. One of our favorites is hot chocolate. Now, I don’t mean just any hot chocolate. In a chocolatier’s home, only the absolute best will do! Today, I’m sharing my trusty standby recipe that I encourage you to get all kinds of super creative with.

(You can see Beezie in the photo above, feeling a bit blue since doggies can’t have chocolate. Poor Beez. I’ve got hot chocolate, but she’s got a lovely fur coat to keep her warm. Fair enough.

Heart Warming Pot of Hot Chocolate Recipe

For a party of 8

12 cups of almond milk

2 cups of powdered cocao — or fist size chunk of cacao paste, finely chopped

about half as much cacao butter

dash of mineral salt

dash of vanilla extract

1 cup coconut sugar or maple syrup

In a big pot on the stove, heat the almond milk. Once warm, add in the coconut sugar granules, cacao paste and cacao butter, vanilla extract, and mineral salt.

For the “alchemy bar” I use Lucuma, Cardamon, Cinnamon, Mesquite, and a bowl of Honey – for those that loooove the taste of Honey & Chocolate together. (Ummm, me!)

It is important to mix in the powdered ingredients while it’s still nice and hot so little ones will need adult assistance obviously!

PARTY NOTE: Tie a different colored piece of embroidery floss on each mug so everyone can keep up with their own!

I’d personally love to get some new soup recipes for my Instant Pot.
